(two shakes of) a lamb’s tale

In recent years I’ve a tendency to overcook meat on the grill.

There’s something about the smoke and heat and flame
 (and the beer)
that gets away from me now.

But lamb, especially the rib, is delicate and very tender.

So this time we didn’t cut them into chops first, we left the entire breast whole and soaked it for grilling in herbs.

We chopped fresh mint and red onion, then added spices clockwise from 12 noon:

Garam Masala, chopped fresh mint, dried red chilies, chopped fresh parsley, cumin, red onion and hot paprika in the middle. All, into the blender.

Then overnight in the fridge.

The grill should be searingly hot to crust the outside but leave the chop very rare.

It doesn’t take long, four minutes on the top plus...

Maybe three or so, on the bottom.

Yeah, that’s it.
But just in case your timing’s bad like mine?
Always have a backup plan.

Happy Labor Day!

Dutchess County?

Maybe Long Island?

Nah. Closer.

Happy Holiday!

where the wild things are gonna be

The Electric Zoo is New York's electronic dance music festival held on Randall’s Island every Labor Day weekend since 2009.

In just two years it grew into a three day event and by 2011 boasted 85,000 paid entries.

Similar events happen all over the world but Billboard Magazine calls this one “the best music festival of its kind.”

Over 110 DJ’s will present music and light shows amid dancing, eating, drinking and perhaps some other uh, activities.

Last year, things got a bit out of hand and the third day of the festival had to be cancelled for tragedy, with refunds issued for all.

Party drug MDMA (ecstasy, or molly) took the lives of Jeffery Russ and Olivia Rotondo, two young concert goers. They were only 21 years old.

So this year promoters have gone on television to announce everyone will be subject to no fewer than five searches while waiting in the line to the fairgrounds.

The list of things you may not bring in is comprehensive.

Security will be very tight.

This is the public service announcement:

Besides, doing hard drugs is for the birds!

Have a great holiday weekend.
You animals.

old white dudes

keepin’ it real.

not too hard to see

Back on February 16th ClockTowerTenants offered an opinion piece about Pakistani extremest Anjem Choudary. You can see a photo of him here:

Now British intelligence agencies have identified the man they believe beheaded American James Foley last week.

He’s an English rapper turned Muslim terrorist,
 indoctrinated and trained by

-surprise, surprise-

Mr. Choudary himself.

You can read about that here:

In June 1944 President Dwight D. Eisenhower had seen enough of the Nazi butchering of Jews and launched the Normandy march to Germany, one of the turning points of World War 2.

Two years later President Harry S. Truman gave the order to bomb Japan and bring an end to the conflict brought on by a sneak attack on Pearl Harbor, in which 2,403 Americans were slaughtered.

Today Germany and Japan remain two of America’s staunchest allies in the pursuit of global terror.

Even the most jingoistic Americans will have a hard time wrapping their heads around a medieval practice like beheading.

But every indication appears we’d best accommodate this.

Or just stop with the politically correct bullshit.

cool pineapple and hot red pepper salsa

Fill Charlies with hungry ClockTowerTenants...

and add a boatload of warm tortillas.

Then yellow rice,

And refried beans.

Lime fish?

Or chopped, barbecue-chicken!

Corn, red onion and green chiles.

Amazing pineapple and red pepper salsa.

And perhaps a drizzle of sauce?

Grab a cold drink and just try to find a seat.

Another delicious Cantina!

Thank you Chef Josh,
Charlie, Mike
 and the ClockTowerTenants.

And you, Tomas!
