Remember that fruit galette I made awhile back?
The farmer's market will fade soon so I made another, a savory one this time, with tomatoes and zucchini and corn.
Drain the chopped tomatoes of their juice in a colander, then soften them in a skillet in a bit of butter with the chopped zucchini and some red onion. Salt and pepper.
Mix in the corn freshly cut from the cob.
Spoon into the center of your pastry.
Grate with reggiano parmagian.
Now fold the edges up.
Brush with milk and add grated cheese all over the top.
Again, 350〫for about an hour.
I’m gonna miss the farmers market.
