Not actually a game bird and not necessarily a “hen”, they are the carefully controlled offspring of a White Plymouth Rock bred for its hardiness and the dark little Cornish hen from county Cornwall, England, renowned for its plump, round breast.

Taken together, they yield a meaty little bird hardy in all climates that grows quickly, from hatching to dinner table in about a calendar month.
Roast them in a searing hot oven with black and white grapes, French shallots and fresh thyme, and lots of salt and pepper.
Just don’t get attached to the chicks.
