short n' sweet


The lowly sweet potato is an American vegetable consumed since prehistoric times, dating back 10,000 years.

Let’s make a sweet potato casserole!

Roast 4 or 5 potatoes, cool and scoop out.

Then add an egg, a little bit of OJ, 2 melted tablespoons of butter, a dash of vanilla extract, plus salt and pepper.


Turn it out into a roasting dish, dot with butter and pecans and sieve a little dark brown sugar on the top. 

Not too much.


30 minutes at 350.
